In my time working at restaurants, I was absorbing ideas and inspirations like a little sponge. This cherry tomato confit, with its countless uses, caught my eye as a must-make…and once I did, I never stopped. Perfect for end-of-summer, this confit is a wonderful way to capture the last ripe tomatoes from your garden, and to preserve them!

I like to store some of my jars in the refrigerator, and the rest in the freezer, so I can enjoy ripe, bursting cherry tomatoes into the colder months. All you need is two hours and a painful amount of olive oil!
